•Mexican Cornbread

This is  gluten free unless you use a non gluten free corn muffing mix.

Grandmother noted that “this Recipe is real old and very Good”

Preheat oven to 350 degrees

Grease a 8×8 baking pan

1 package of Make It Gluten Free Corn bread mix (or 1 box corn muffin mix if not gluten free)

1/3 cup olives

1 can whole kernel corn (drain liquid)

Jalapeno peppers

1 pound ground meat

Dash of salt

You can substitute green peppers for jalapeno peppers if you wish

Brown the ground meat in a skillet and drain grease. Chop the olives and peppers to suit your taste. Add pepper and olive mixture to meat, stir in corn. Mix corn muffin mix according to package directions. Grease a square baking dish. Pour in enough muffin mixture to cover the bottom of the dish. Add meat mixture and top with remaining muffin mix. Bake at 350 degrees for 30 minutes or until a toothpick inserted in the bread comes out clean.
