Wrapping a bread pan for baking Gluten Free Bread

Baking Gluten Free can be a challenge. The Bread needs a taller pan to support it while it is raising and when baking. You can get special pans, generally they are narrower. There is also a pan you can purchase with a removable collar, I have not tried either yet. Let me show you what I do.

 

Using foil, I get the commercial size at SAMS, it is heavy duty and larger in width. The 18 inch works great, though 12 would work too. It needs to be long enough to go around the pan at least 1 1/4 times.

Lay out the foil flat
fold the foil in half
fold again

Coat your pan with cooking spray (pam) or coconut oil before wrapping the pan. Do not coat the foil. the bread needs to be able to hold on to it while rising. I will not stick when cooked.

The foil is wrapped over foil to secure it.

You might have to pull it tight. You do not want the foil to be loose.

Now you can bake Gluten Free Bread with a beautiful domed top! You can use parchment also, but I do not find that I get as good a rise on the bread. The foil is stronger and can support the dough better in my opion.
