Raspberry BBQ Chicken Wings and BBQ Sauce Recipe

These are amazing. A different twist on BBQ wings that all will love. Watch the ingredients (ketchup, jam…) and make sure they are gluten free.

 

Raspberry BBQ Chicken Wings

2 pounds Chicken wings, separated

½ BBQ sauce (see below)

½ cup Raspberry Jam

Preheat oven to 400°F if baking wings.

Bake or fry wings (you can also buy the wings, cooked from most large supermarkets). Make sure they are “naked” wings. This just means that they are not breaded. Also, check with the deli staff or manager that the chicken is not cooked with foods that are breaded in the same oil.

Separate drumettes and wing tips.

Set a wire rack inside of a cookie sheet and spread them out in a single layer. Bake wings until cooked and the skin is crispy, about 45-50 minutes.

Mix the BBQ sauce and raspberry jam in a small sauce pan and heat to a boil. Turn off the heat and let set.

When the chicken is done, place the chicken wings in a shallow baking pan. Top with sauce and bake for 10-15 minutes to set the sauce.

Serve while still hot, or chill and eat cold

BBQ Sauce

I have used this BBQ sauce for years. It is great on chicken, beef, pork and combined with jams for a different flavor twist. I generally make a large batch and can small jars for use later. This sauce also freezes well if you are not comfortable canning. Just freeze in a small bag with all the air squeezed out.

Check that all ingredients are gluten free!

½ cup firmly packed brown sugar

2 teaspoons salt

2 teaspoons celery seed

½ teaspoon minced garlic

3 cups ketchup

1 cup finely chopped onions

¼ cup lemon juice

¼ cup Worcestershire sauce (check that it is gluten free as of this post the following brands are GF, Check with the manufacture if your favorite is not listed. French’s extra tenderizing; Lea & Perrins , original, Reduced Sodium, Thick Classic; Meijer Brand, Spartan Brand, The Wizard’s, and Wan Jan Shan)

2 teaspoons prepared mustard (check for GF, French’s, Hellman’s, Meijer, Great Value (Walmart) and some other are gluten free as of this post. As of this time (2/3/2017) I do not have any information that Heinz is GF. Contact the company if this is your favorite and get confirmation from them.)

1 teaspoon mustard seed

In a large sauce pan, mix all ingredients. Bring to a boil, then reduce heat to a simmer and cook for 20 minutes.

Use immediately on any meat or refrigerate for later use. This sauce is best if made the day before so the flavors can blend.
