Gluten Free Chocolate Chip Cookies

Your guests will not be able to tell that they are gluten free!

1 ¾ cup gluten free oats

1 tablespoon almond flour

1 ¾ cup gluten free all purpose flour

1 teaspoon baking soda

1 teaspoon xanthan gum

½ teaspoon salt

½ cup coconut oil (or gluten free margarine or gluten free butter)

½ cup Truvia brown sugar (or 1 cup dark brown sugar)

½ cup granulated sugar

2 large eggs

1 teaspoon gluten free vanilla

2 tablespoons almond milk

10 ounce gluten free, dairy free chocolate chips about 2 cups (you can use regular chocolate chips if you are not making this dairy free also)

Preheat oven to 375 degree and line cookie sheets with parchment paper.

Mix the oats, almond flour, GF AP flour, baking soda, xanthan gum and salt in bowl and set aside.

Using an electric mixer, cream together coconut oil and sugars in a large bowl until well blended.

Beat in eggs one at a time.

Beat in the vanilla and almond milk.

Gradually add the dry ingredients beating until well combined.

Stir in the chocolate chips.

Using a tablespoon, form each cookie into a ball and place on a prepared cookie sheet. Gently press down on the cookies with the bottom of a glass or a fork (these cookies do not spread out).

Bake cookies in preheated oven about 11 minutes until the edges turn brown.

Remove from oven and cool 5 minutes on cookie sheet and then transfer to wire rack to cool completely.

Makes about 4 dozen cookies
